1 1/2 cups rolled oats
1 cup almond flour
1 ripe banana
1/3 cup SMASHMALLOW Toasted Vanilla (cut into tiny pieces)
1/2 cup dark chocolate chips
1/2 cup coconut sugar
1/3 cup coconut oil
1/2 tsp baking powder
1/2 tsp vanilla extract
1/2 tsp salt
Preheat oven to 350 degrees.
Pulse oats in a food processor until lightly ground.
In a large bowl, add oats, flour, sugar, baking powder and salt and mix until well combined.
Add melted coconut oil, mashed banana, and vanilla extract. Stir to combine.
Fold in chocolate chips. Form dough into balls.
Insert a few pieces of SMASHMALLOW into each ball by pressing the dough into your hand, forming a slight bowl shape. Place the mallow pieces in the bowl, then form the dough back into a ball around the pieces.
Place dough balls onto parchment lined baking sheet and flatten slightly. Bake for 15-18 minutes 350. Allow to cool 5-10 minutes and then enjoy!
