Chewy S'mores Collagen Cookies

Recipe by Secretly Healthy Home 

2 scoops collagen

1 1/2 cups graham cracker flour (grahams of your choice blitzed in a blender or food processor)

1 egg

1 1/2 tsp vanilla extract

1/4 cup plant-based milk of your choice

1/4 tsp pink Himalayan sea salt

1 1/2 tsp baking powder

1 tsp honey or maple syrup

3-5 SMASHMALLOW mallows in the flavor of your choice

2 Tbsp chocolate chips

Step 1
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

Step 2
In a medium bowl, combine all ingredients except SMASHMALLOW and chocolate chips. Mix until a cookie dough forms.

Step 3
Use a spoon or scoop to portion out dough into 1-2 Tbsp mounds and place on the cookie sheet. You should have about 12 cookies.

Step 4
Cut or rip mallows into halves or quarters and place a piece on top of each cookie. Place a few chocolate chips on top of each cookie too.

Step 5
Bake for 10-12 minutes or until cookies are baked through and mallows are golden. Allow to cool for 10 minutes before serving and enjoying!
