1 cup coconut sugar
1/2 cup + 1 Tbsp neutral oil, melted and cooled
1/4 cup + 1 Tbsp water
Splash of vanilla extract
2 cups cassava flour
1-2 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 cup SMASHMALLOW Cinnamon Churro (or flavor of your choice), cut into quarters
Preheat oven to 350 degrees and line a baking sheet with parchment.
Whisk together sugar and wet ingredients in a large bowl.
Sift together remaining dry ingredients (except SMASHMALLOW) in a small bowl, then add quartered SMASHMALLOW and toss until well coated.
Add wet ingredients to dry and fold with a spatula until just combined.
Use a spoon to portion dough into 12 mounds and space evenly on cookie sheet. Ensure marshmallow pieces are completely covered with dough and not near the edge of the cookies to avoid a melty mess!
Bake at 350 for 13-15 minutes or until edges are golden brown. Don't overbake. Let cool before serving and enjoy!
