Gluten Free S’mores Bars

2 Cups oats

1 Tsp nutmeg

Dash of sea salt

1/2 Cup coconut oil (melted and cooled)

3 Tbsp coconut sugar

1 9-oz bag dark chocolate chips

1 4.5-oz bag of SMASHMALLOW (flavor of choice)

Step 1
Preheat oven to 350 F and line an 8 x 8 baking pan with parchment paper.

Step 2
In a bowl, mix oats, nutmeg, and sea salt together and set aside.

Step 3
In a separate bowl, stir the coconut sugar into the coconut oil until the sugar is almost dissolved in the oil.

Step 4
Pour the coconut oil mixture into the bowl with the oats and stir until well combined (the consistency should be dough-like, this is your ‘graham cracker’ crust).

Step 5
Spoon the dough into the baking pan and press into the bottom of the pan until even and set aside.

Step 6
Heat a medium skillet over low heat and add the bag of chocolate chips.

Step 7
Continuously stir chocolate chips until melted (don’t leave them in the skillet unattended or they will burn).

Step 8
Once chocolate is melted, pour over the ‘graham cracker crust’ in the baking pan.

Step 9
Place marshmallows evenly on top of the chocolate and bake for 15-17 minutes until the tops of the marshmallows turn golden brown.

Step 10
Let cool for 10 minutes then transfer to fridge for about an hour.

Step 11
Once cooled, cut bars into 16 squares and enjoy!
