Solo Stuffed S'mores Cookie

When a single perfect cookie is all you need...

INGREDIENTS
4 Tbsp gluten-free flour of your choice

2 Tbsp coconut flour

1 Tbsp coconut sugar

1/2 tsp baking soda

1 egg

1 Tbsp ghee

2-3 Tbsp chocolate chips or chunks of your choice (or cut up a chocolate bar)

1 SMASHMALLOW in the flavor of your choice (we used Cinnamon Churro)

DIRECTIONS
Step 1
Preheat oven to 350 degrees

Step 2
In a medium bowl, mix all ingredients except the chocolate and the SMASHMALLOW. Then fold in the chocolate chips.

Step 3
Roll the dough into a ball, then press the ball into the palm of your hand, forming a bowl shape. Place the SMASHMALLOW and the rest of the chocolate chips inside, then form the dough back around the fillings.

Step 4
Place on a piece of parchment paper or cookie sheet and bake at 350 degrees for 10 minutes or until lightly golden and gooey. Allow to cool for 5 minutes before enjoying!
